CHAMPAGNE & GOUGERES
A glass of Champagne Nicolas Feuillate & warm cheese puffs with gruyere and parmesan cheeses

“COGNAC” BLACK TRUFFLE SALAD
Endive and mesclun mix, spicy walnuts, cranberries, pear and black truffle vinaigrette

SMOKED SALMON & CAVIAR NAPOLEON
Mache salad, potato wafers, capers, lemon cream caviar dressing
– or –
LEEK, POTATO AND TRUFFLE VELOUTE
Truffles potato gnocchi and fried leek julienne

MAIN LOBSTER VOL-AU-VENT
Puff pastry filled with butter-poached Maine lobster, sauteed spinach, salsifi, light bechamel and lobster jus

CHICKEN AND FOIE GRAS FRICASSE
Farm-raised poultry cooked together with wild mushroom, baby Yukon potatoes, Brussels sprouts and Foie gras “Albufera” sauce.

Beef tenderloin wrapped in brioche and cooked with mushroom duxelle, spinach lasagna and truffle and port “Perigueux” sauce
